Raw granola bites

These tasty granola bars provide slow releasing energy and make a great on the go snack or a lunch box treat for the kids.


280g dates, pitted                   240ml warm water                  

120ml coconut oil                    100g pumpkin seeds

500g jumbo oats                     100g sunflower seeds

40g hemp seed                       100g unsweetened desiccate coconut

1 tbsp vanilla extract (optional)


To make:

  1. Line or lightly grease a baking sheet
  2. Soak the dates in the warm water for 20 minutes and then blend together to form a smooth paste
  3. Gently heat the coconut oil in a pan and then add to the blended mixture
  4. Add the vanilla if using and blend the mixture until smooth
  5. In a large bowl, mix together the oats, coconut and seeds. Divide the mixture into two, and pulse half of the mixture in a food processor roughly, maintaining some texture 
  6. Tip the pulsed mixture back with the whole mixture and pour contents of blender into the bowl
  7. Combine thoroughly until no dry ingredients remain
  8. Refrigerate for 2 hours and then cut into small squares or bars
  9. Store in an air tight container in the fridge for up to a week
